Cleared strict standards! Here are examples of delivered aging warehouses.

We delivered a maturation chamber to ANA InterContinental Hotel, The Steakhouse. The conditions for this chamber were an average humidity of 80% with an internal temperature of 1°C, and air circulation within the chamber. It is honestly difficult to meet these conditions with a maturation chamber that has a large internal volume and a high height. Simply adding a humidifier would cause the internal cooler to frost up, leading to the growth of bacteria. This was made possible by our company, which has numerous achievements. Additionally, we received a request from the kitchen side to monitor the internal conditions, so we used double-sided glass. The chef can always check the inside of the maturation chamber through the glass on the back. We would like to introduce a case where we supplied a maturation chamber to Kaku no Shin Rt, located on the second floor, a 3-minute walk from Yoyogi Hachiman Station. Kaku no Shin is, of course, a restaurant where you can enjoy aged meat. The concept of the maturation chamber in this store is European (especially French). A few months before the opening, the president personally visited famous butchers and farms in France, holding numerous meetings until the final design was established. Ribs and thighs, as well as shank meat, are controlled for temperature, humidity, and airflow, increasing in deliciousness day by day. We would like to introduce a case where a maturation chamber (prefabricated type, 1.5 tsubo) was delivered to a certain location in Tokyo. While many may have the impression that our maturation chambers are mostly cellar types, we also effectively accommodate prefabricated types. The store in this case aims to faithfully recreate the New York flagship in Japan, and although it is in an unseen location, it has been installed inside the store. Designed with a temperature controller and a humidity controller, it is set up to achieve high humidity without using dangerous humidifiers, allowing for fine adjustments. We would like to introduce a case of delivering a maturation chamber to Kaku no Shin R+ and Kaku no Shin 82. Typically, shelf lighting is often installed at the back of the shelf, which can make the products appear dark from the customer's perspective. During my many years working at a showcase manufacturer, I always thought about how much more beautiful the display could be if the lighting was directed from the front. Although I had some anxiety about this being the first implementation, the lighting was praised as the best part of the setup. The upper lighting illuminates the meat from below, allowing the true color of the meat to be beautifully reproduced. Aging Warehouse Delivery Case: Yakiniku Shinkouen

Keep low temperature and high humidity (1℃, 80%)! The wind is set to a weaker level compared to dry aging.

We would like to introduce a case where we delivered a dry-aging maturation cabinet W1,800 to Shinkouen Yakiniku in Akashi City, Hyogo Prefecture. This time, we received a request to age A4 or A5 grade black wagyu beef in the dry-aging cabinet, so we maintained a low temperature and high humidity (1°C, 80%) and set the airflow to be gentler compared to traditional dry aging. The dimensions are W1,800 × D800 × H2,200, making it the largest in our planned sizes, and its substantial presence is impressive. It was our first time drying Holsteins, but we believed that taking on this challenge would contribute to our growth, so we proceeded with trial and error during the construction. Since Holsteins have a high moisture content, a fan is typically used for moisture activation. However, we aimed for a strong and rich flavor with a weak aroma by using our original method of employing a fan only during the dehumidification process.
